Ready to serve

Food the kitchen has finished, waiting to be carried out.

What it is for

The kitchen display is the kitchen's board. Ready to serve is the floor's board — it shows what has been marked ready, with the table it belongs to, so whoever is on the floor can see what is waiting without going to look.

It closes the gap between "cooked" and "on the table". Food sitting under a pass because nobody knew it was up is the problem this screen exists to remove.

Marking served

Once a dish has gone to the customer it is marked served, which takes it off the list.

Mark it when it goes, not when you remember. The list is only useful while it reflects the pass, and a stale one is worse than none — people stop trusting it and go back to looking.
